At the end of June, about 15 days earlier than usual, we harvested the first wheat planted in the lands of the Cittadella.
About four hectares of an ancient variety of durum wheat, Scorzonera, thus called for the dark colour of the ears, meaning it can soak up all the power of the sun.
It is a light wheat low in gluten, cultivated strictly according to organic methods, namely with shallow ploughing which preserves the vitality of the soil and without using any chemical substances.
